The vegetative stoppage of the plants gives rise to various works in the field while in the winery the production continues
While in the countryside the vineyards that give rise to the wines of the Denomination of Origin Rías Baixas They are in a vegetative stop, the wineries are in charge of carrying out the processes of making Galician wines.
On the one hand, in the vineyards the winegrowers are taking advantage of this stop phase in the plant cycle to carry out the pruning work. With them we seek to breathe vigor and energy into the vine so that it begins its vegetative cycle giving all the best. In short, the grape that is about to be born in the next season. Next will come the prevention tasks, reducing the use of chemical products to the maximum, to fight against future diseases.

Inside the winery, after the harvest in September and the subsequent fermentation, the racking was carried out. At Bodegas El Inicio, we then proceeded to eliminate the thick lees made up of remains of skin and pulp of the Albariño grape. From there, an aging process began on fine lees from the fermentation yeasts themselves. With this, it is possible to provide the wine ELAS a > smoothness and creaminess. To provide stability to the wine against oxidation and to achieve fattier and more harmonious wines, we carry out the so-called ‘batonnage’ weekly, which consists of lifting the fine lees of the wine and keeping them in suspension.
A slow process to make the wine ELAS continue to evolve in the bottle, gaining quality. And it is that although it is a wine that is popularly consumed in a year as it is white, the Albariño variety continues to grow over time. So it can be enjoyed with two or even three years in the bottle. For this reason ELAS has a cork stopper so that oxygen, although in minimal quantities, continues to reach the wine, making it evolve to reach our glass in optimal conditions.
